りえか丨素材を味わう旬のレシピ on Instagram: "実山椒の下処理と保存&簡単漬け★ →その他の旬レシピは@riin_food 小粒でもぴりりと辛い山椒。 しびれる辛さがやみつきになりますよね♪ 実山椒(山椒の実)の旬は5〜6月頃。 手に入ったら、早めに下処理して冷凍、 もしくは醤油漬けや塩漬けにしたら、 手軽に長く活用できるのでおすすめです! 【材料】(作りやすい分量) 実山椒(山椒の実)1パック(正味80g) 醤油 実山椒がひたひたに被る量 塩 実山椒の10%の重量(40gなら4g) 【作り方】 ①実山椒は水で洗い、太い茎を外す。(実についた細い軸は残っていてもOK) ②たっぷりの湯で5分ほど茹でる。(手で潰せるくらいのやわらかさになるまで) ③水に30分〜1時間さらす。(辛味やえぐみがほどよくなるまで) ④水気を切ってよく拭き取り、ジッパー付き保存袋に入れて冷凍する。(6か月ほど保存可能) 〈醤油漬け〉 清潔な保存瓶に、下処理した実山椒とひたひたにかぶるくらいの量の醤油を入れ、常温(冷暗所)に2〜3日おいたら、冷蔵庫で保存する。 〈塩漬け〉 清潔な保存瓶に、下処理した実
