Number 8️⃣ of my Top 10 of 2025 𝙋𝘼𝙎𝙏𝙍𝘼𝙈𝙄 𝘽𝙍𝙎𝙄𝙆𝙀𝙏 This pastrami recipe is from my cookbook and this was probably my best pastrami brisket to date and I’ve only done three so far. Even though it was the best one yet, I know I can still do better. One thing I messed up on: during the 7-day brine, I didn’t rotate the meat a few times like I should’ve. I think that led to the uneven pink in the middle. The brine definitely did not reach the center, mainly because the meat side that was
