Cucuzza Squash Casserole RecipePart 3 to 7 of the Cucuzza Squash Series(Note: Any squash can be used for this recipe, and zucchini works wonderfully!)Ingredients:First Layer of Squash:- 2 cups shredded cucuzza squash (or any squash)- 2 large eggs- 2 cups of your favorite cheese blend- 1 tsp oregano- 1 tsp Italian seasoning- Salt and pepper to tasteRemaining Layers:- 4 cups assorted cheeses of your choice (e.g., 1 cup ricotta, 1 cup feta, 1 cup cheese blend, and sliced dried mozzarella)- ½ pound

Making Pasta con la Cucuzza for our talented relative @ricardomarinello_tenor Ingredients:3 lbs cucuzza 3 potatoes Olive oil 1 large onion 1-2 garlic cloves 1 can of peeled tomatoes (without juice) 1 tablespoon fresh parsley Salt and pepper to taste Water (as much as it takes to cover cuccuzza) Directions: In a medium pot add olive oil to bottom and sauté the onions until they are translucent and soft.
