This is how I cook a beef topside roast. It’s a pretty foolproof method - longish, slow cooking time with a bit of water in the bottom of the dish and a cover to keep the moisture locked in results in tender, delicious meat & veggies. The cooking time and oven temp will vary depending on size of roast and how long you have til dinner 😄 but here’s my basic method. For a smaller roast or shorter cook time you could cook 2-3 hours at 180C (check meat after 2 hours). This method is pretty forgiving
